Kamote Bread

Camote or sweet potato is always included when I'm in a diet.  It is rich in Vitamin A, Vitamin C, Manganese, Fiber, B Vitamins, Potassium and Iron. This super food is also good for Diabetic since it's low glycemicBut honestly I'm bored eating this alone when just boiled and good thing recipe can easily access now.

This is my first attempt of making my Camote bread which I got the recipe online (http://www.filipinovegetarianrecipe.com/bread_and_pastries/sweet_potato_quick_bread.php) I just make some amendment to suit in our diet.2

Ingredients:

2 cups boiled mashed Camote/Sweet Potato
1 cup Fresh low fat milk
1 egg
1/4 cup butter
2 tbsp. Canola oil
1 tsp. salt
1 cup all purpose flour
1 cup whole meal/ wheat flour
2/3 cup brown sugar
1 tbsp. baking powder

Procedure:

1. Stir together all the dry ingredients : flour, sugar, salt and baking powder.


2. Combine egg, milk, butter, oil, mashed potato


3. Pour all at once over flour mixture and stir only until flour is moistened


4. Pour into greased loaf pan.


5. Bake at 375 degrees F for 1 hr. and 15 minutes or do the tooth pick test.

Finish product - soft and moist
